Hungry For a Piece of Home

My dear friends’ daughter, Lauren, has a terrific cooking blog. She was kind enough to offer to guest post here today. What a treat!

GUEST POST: Coconut Macaroons with Chocolate Drizzle

Growing up in Miami I was constantly surrounded by delicious food.  Both at all of the fabulous restaurants peppered throughout the city and at home.  (My mom is an absolutely incredible cook, and her food rivals any restaurant cuisine!)
When I moved to Orlando eight years ago I started cooking frequently and learned to re-create many of the delicious, eclectic dishes I still crave from
Miami.

My parents moved into a beautiful house on the edge of Coral Gables and Coconut Grove a few years ago.  I visit them often and love to test new recipes on them while I’m home.  I was reminiscing about Coconut Grove and created this recipe for Coconut Macaroons.

Chewy bites of shredded coconut complemented by a dark chocolate drizzle. They’re the perfect dessert to finish a meal or cure a sweet tooth any time of day.  And they remind me of home sweet home.
